Of all the pizzas I sampled, the Preston Hollow was my absolute favorite. Topped with caramelized onions, Calabrian chiles and Italian sausage from Jimmy’s Food Store, this pizza is destined to become the Dallas location's signature dish. The Calabrian chiles give it a spicy flavor without tasting too hot. I don't think the Calabrian chile is even listed on the Scoville scale -- so it's all flavor and no heat.
One of the interesting things that make this pizza stand out is the method in which it's cooked. We're not talking your typical GE Profile oven here. Dough uses an authentic wood-burning oven that was built by a master oven mason from Naples, Italy and it cooks the pizzas at 800 degrees-plus in approximately 90 seconds. Now thatsa fasta.
